Vegetable Samosas

Recipe for Vegetable Samosas


Ingredients:

  • 6 large potatoes

  • 2 tablespoons coconut oil or ghee

  • ½ teaspoon black mustard seeds

  • 2 dried red chillies, coarsely chopped

  • 1 medium-sized onion, finely chopped

  • ½ cup of frozen peas

  • ½ cup chopped carrots (chopped small)

  • ½ teaspoon ground turmeric

  • 1 teaspoon ground coriander

  • 1 teaspoon ground cumin

  • 1 teaspoon salt or to taste

  • 1-2 fresh green chillies, coarsely chopped and seeded if a milder flavour is preferred

  • 1 tablespoon chopped coriander leaves

  • 1 packet of filo pastry from the supermarket, (you will likely find it in the fridge or freezer section)


How to make the vegetable samosa filling

  1. Peel and cube the potatoes, then boil them in lightly salted water until they are almost cooked through.

  2. Heat oil in a pan and add the mustard seeds. Once they start crackling, add cumin seeds, red chilies, onions, carrots, peas along with the green chilies. Fry until the onions and carrots are soft, then add turmeric, coriander, and cumin.

  3. Next add the potatoes and the salt. Reduce heat to low, stir and cook until the potatoes are thoroughly mixed with the spices, test the seasoning and adjust if needed.

  4. After cooking, remove the mixture from heat and stir in chopped coriander leaves. It is important to allow the filling to cool thoroughly before using it to stuff the samosas, as this will prevent the pastry from getting soggy and make it easier to handle during the filling process. Patience in cooling will ensure a successful and delicious end result for the Vegetable Samosas.



How to fold the samosas

Using filo pastry from the supermarket is a convenient option for making samosas. The thin, flaky layers of filo pastry can easily be used to encase the filling and create crispy samosas without the need for making the pastry from scratch. This time-saving alternative allows you to focus on preparing the flavourful filling and assembling the samosas quickly and efficiently, making it a great option for home cooks looking to enjoy delicious homemade snacks with ease.



To fold the samosas, start with a sheet of samosa pastry or dough cut into a 10cm by 30cm rectangle. Place a spoonful of the cooled keema filling in the top left triangle of the pastry. Fold one the right hand corner of the pastry over the filling to form a triangle, then continue folding the pastry in a triangular shape, sealing the edges with a flour and water paste. Ensure the samosa is firmly sealed to prevent the filling from leaking during frying. Repeat the folding process for all the samosas before frying them until golden and crispy.
