Saag Aloo Recipe

Saag Aloo is a classic Indian dish that combines the earthy flavours of potatoes with the vibrant and nutritious goodness of spinach. This vegetarian delight offers a harmonious blend of spices, creating a satisfying and comforting meal that is enjoyed in households and restaurants alike. This Saag Aloo recipe is one of my all time favourites, I usually use a basic curry gravy to give it more depth so remember to have some ready made or from the freezer. And remember a good chef always keeps a cup of water handy.




Recipe for Saag Aloo


Ingredients:


Ingredients:


  • 1 large onion

  • 6 medium potatoes peeled and chopped into 1 inch cubes

  • 1 bunch of fresh spinach roughly chopped

  • 2 tablespoons of ghee or coconut oil

  • ½ teaspoon of fennel or caraway seeds

  • 2 cloves of garlic crushed

  • ½ inch of grated root ginger

  • ½ teaspoon of turmeric

  • ½ teaspoon of ground cumin

  • 1 teaspoon of ground coriander

  • ½ teaspoon of chilli Powder

  • A cup of water handy

  • 2 ladles of Basic Curry Gravy

  • 1 teaspoon of Celtic or Himalayan salt

  • Handful of chopped coriander leaves

How to make Saag Aloo

  Prep all your ingredients first


  1. For a delicious Saag Aloo, start by heating oil in a pan over a medium heat and briefly fry the fennel or caraway seeds then add the onions and sauté until soft. 2. Add the chopped potatoes and cook until they start to soften you may need to add a little water to stop them burning and cook until the onions start to brown along with the potatoes.

  2. Lower the heat and add the ginger, garlic, turmeric, cumin, coriander, and chili powder adding water as needed to stop it from burning.

  3. Now add the basic curry gravy and salt , cover, and simmer until potatoes are tender. Adding water as needed.

  4. When the potatoes are cooked add the chopped spinach leave

  5. Check the seasoning and then finish with a squeeze of lemon juice and garnish with coriander leaves, serve this scrummy Saag Aloo hot with rice or naan bread.
