3-4 tablespoons of ghee or coconut oil
1 medium-sized onion, finely chopped
2-3 cloves garlic, peeled and crushed
2 whole red chillies (Optional)
½ green pepper chopped (Optional)
½ teaspoon ground turmeric
½ teaspoon chilli powder
1 teaspoon ground coriander
1 teaspoon ground cumin
¾ teaspoon salt or to taste
1 tablespoon tomato puree
225g/8oz mushrooms, chopped

To start making Mushroom Bhaji, heat oil over medium heat in a pan and fry the onions chilli and green pepper until the onions lightly browned. This process will help to caramelize the onions and enhance their sweetness. Remember to stir occasionally to ensure even browning and prevent burning.
Lower the heat and add garlic, turmeric, chilli powder, coriander, and cumin to the pan. Stir and fry the spices, adding about 1 tablespoon of water to prevent sticking. As the water evaporates, add more in small amounts, repeating until the spices have been fried for about 5 minutes. This process helps to release the flavours of the spices and create a fragrant base for the Mushroom Bhaji.
Now add the salt and tomato puree, mix well and add the mushrooms. Stir until the ingredients are thoroughly mixed.
After frying the spices for 5 minutes, sprinkle about 2 tablespoons of water over the mixture and cover the pan. Allow it to simmer for 10 minutes, which helps to further develop the flavours while also allowing the mushrooms to cook and absorb the spices.
Once the Mushroom Bhaji has simmered for 10 minutes, check the consistency of the dish. The finished product should have a small amount of gravy to enhance the flavours, but it should not be too runny. If the gravy seems too thin, remove the lid and allow the excess liquid to evaporate until the gravy reaches a desired thickness.
