Medium Chicken Curry Recipe


Ingredients:

 

  • 2 tablespoons of ghee or coconut oil

  • 1 chicken breasts per person

  • 1 inch piece of ginger finely grated

  • 2 cloves of garlic crushed

  • 1 large red bell pepper chunky chopped

  • 1 large onion chunky chopped

  • 2 teaspoons of ground coriander

  • 1 teaspoon of ground cumin

  • ½ teaspoon of chilli powder

  • 1 teaspoon of ground turmeric

  • 2 ladles of basic curry gravy

  • 1 large chopped tomato

  • 1 teaspoon of Celtic or Himalayan salt

 To finish

  • 1 teaspoon of garam masala

  • Coriander leaves

  • a squirt of lemon juice



How to make Medium Chicken Curry

Prep all your ingredients,


  1. Start by heating the oil or ghee in a sturdy, heavy-based pan over medium heat. Add the chunky chopped onions and bell pepper, stirring occasionally to prevent burning. Cook until the vegetables are tender and soft.

  2. Next, add the minced ginger and garlic, stirring to combine with the onion mixture. Let the aromatics cook for an additional minute, releasing their fragrant essence. Then, add the ground spices and cook for a few minutes, adding a splash of water to prevent burning.

  3. Once the spices are fragrant, add the chicken breast and cook until it changes color.

  4. Add the basic curry gravy and combine well. Cover the pan with a lid and cook for 15 minutes.

  5. Next, add the chopped tomatoes and cook for an additional 5 minutes.

  6. Finally, add the garam masala, coriander leaves, and lemon juice. Stir in the lemon juice and serve hot."
