Ingredients:

4 tablespoons of olive oil or coconut oil
1 large onion finely chopped
3 cloves of garlic crushed
1 inch piece of ginger finely grated (optional)
2 large red bell peppers
12 Scotch bonnet chillies
2, 400g tins of tomatoes
1teaspoon of of Celtic or Himalayan salt
a quick grind of black pepper
2 desert spoons of white wine vinegar

How to make Hot Chilli Sauce
Prep all your ingredients first
Sterilize you glass bottles or freeze in plastic tubs, ice cube trays and transfer to plastic bags
In a large pan gently fry the chopped onion garlic and ginger with the bell peppers until soft. then add the chopped scotch bonnets cook for around 10 minutes this will release the chilli heat and flavour into the sauce.
Now add the tinned tomatoes and break them up with a wooden spoon, cover the pan and cook for around half an hour stirring regularly. Add the salt and the white wine vinegar and stir in.
let the sauce cool and then blend with a hand or jug blender until smooth. Then take a small sieve and force the sauce through the holes with the back of a spoon into a bowl. Finally put the sauce into sterilized glass jars or bottles. The sauce can be frozen but will keep for weeks in the fridge.
