The decision how to adjust the spice level is entirely up to your personal preference. Please enjoy this flavourful and aromatic Chicken Kholapuri dish, which can be easily made with the help of a blender for convenience, but also holds true to its traditional roots of using a pestle and mortar for the puree. This regional dish strikes a balance in heat but feel free to add more chilies for an extra kick if desired.





Chicken Kholapuri Recipe


Ingredients:

  • 1 chicken breast per person or as you see fit

  • 1 large onion, coarsely chopped

  • 3-4 cloves garlic, peeled and coarsely chopped

  • 1-inch cube of root ginger, peeled and coarsely chopped

  • 6 tablespoons coconut oil or ghee

Spices needed

  • 1 teaspoon of ground turmeric

  • 2 teaspoons ground coriander

  • 1½ teaspoons ground cumin

  • 1-1½ teaspoons chilli powder


  • 1, 400g tin of chopped tomatoes

  • 180ml /6fl oz water

  • 4 - 6 whole green chillies

  • 1 teaspoon of Celtic or Himalayan salt

 To finish

  • Coriander leaves

  • 1 tsp garam masala

Prep all your ingredients,


  1. Wash and dry the chicken breast, then cut into bite size pieces.

  2. To prepare the onion, garlic, and ginger, place them in an electric food processor or liquidizer and blend until a smooth puree is achieved. If using a liquidizer, it may be necessary to add a small amount of water to aid in the blending process and achieve the desired consistency.

  3. Heat the coconut oil in a pan over medium heat and add the liquidized onion, garlic, and ginger mixture. Stir and fry for 5 to 6 minutes, allowing the mixture to cook until the raw smell of the onions has dissipated (this may take longer depending on the onions that you used). This step is crucial in building the aromatic base of the dish and enhancing the overall flavour profile of the dish

  4. After frying the onion, garlic, and ginger mixture, add turmeric, ground coriander, cumin, and chili powder to the pan. Adjust the heat to low and fry for 4-5 minutes, stirring frequently to allow the spices to release their flavours. Next, add half of the chopped tomatoes, stir well, and cook for an additional 2-3 minutes.

  5. Once the spices have cooked, add the chicken to the pan and stir well, cooking until the chicken changes color, approximately 4-5 minutes. Next, add the remaining chopped tomatoes, along with all the juice from the tomatoes.

  6. Now season the dish with salt and pour in the water. Bring the mixture to a boil, then cover and simmer until the chicken is tender, (this may take around 40 minutes) stirring occasionally to prevent sticking. now include whole the green chilies and garam masala, cover, and continue to simmer for an additional 5 minutes.

  7. Finally finish the dish with the chopped coriander leaves and serve.
