Chettinad Masala Powder

Chettinad masala is a blend of spices that is a key ingredient in many Chettinad recipes. Here's a recipe to make homemade Chettinad masala powder:


Ingredients:


  • 2 tablespoons coriander seeds

  • 1 tablespoon cumin seeds

  • 1 tablespoon fennel seeds

  • 1 tablespoon cinnamon sticks

  • 1 tablespoon cardamom pods

  • 1/2 teaspoon cayenne pepper (or more to taste)

  • 1/2 teaspoon turmeric powder

  • 1/2 teaspoon red chili powder

  • 1/4 teaspoon black pepper

  • Salt, to taste


Instructions:


1. Dry roast the coriander seeds, cumin seeds, and fennel seeds in a pan over medium heat until fragrant and lightly browned.

2. Remove the pan from the heat and let it cool.

3. Grind the roasted spices into a fine powder using a spice grinder or mortar and pestle.

4. Add the cinnamon sticks, cardamom pods, cayenne pepper, turmeric powder, red chili powder, and black pepper to the grinder or mortar.

5. Grind the mixture into a smooth powder.

6. Add salt to taste and mix well.

7. Store the Chettinad masala powder in an airtight container for up to 6 months.


Note: You can adjust the proportions of the spices to suit your taste preferences. Some people like a stronger or milder flavour, so feel free to experiment and adjust the recipe to your liking.


Tips:


* Use whole spices instead of pre-ground spices for a more authentic flavor.

* You can also add other spices like cloves, nutmeg, or star anise to the blend if you like.

* Chettinad masala powder can be used in a variety of dishes, including curries, stews, and soups.

* If you don't plan to use the entire batch immediately, you can store it in small portions in separate containers to maintain freshness.



Chicken Chettinad Recipe


Ingredients

  • 1 kilo chicken thighs and or drumsticks

  • 2 tablespoons coconut oil or ghee

  • 2 medium onions, finely chopped

  • 2 cloves garlic, minced

  • 1 tablespoon grated fresh ginger

  • 1 teaspoon Chettinad masala powder ( as above)

  • 1 teaspoon cumin seeds

  • 1 teaspoon coriander seeds

  • ½ teaspoon turmeric powder

  • 1 teaspoon red chili powder

  • 1 teaspoon garam masala powder

  • Salt, to taste

  • 2 tablespoons tomato puree

  • 6 tablespoons coconut milk

  • Fresh cilantro, for garnish

Prep all your ingredients,


  1. Heat oil in a pan over medium heat. Add cumin seeds and coriander seeds; let them sizzle for a few seconds.

  2. Add onions, garlic, and ginger; sauté until the onions are translucent.

  3. Add the chicken and cook until browned on all sides.

  4. Add the Chettinad masala powder, turmeric powder, red chili powder, and garam masala powder. Mix well

  5. Add the tomato puree and coconut milk. Stir well to combine.

  6. Bring the mixture to a simmer, then reduce the heat to low and cook for around 15-20 minutes or until the chicken is cooked through.

  7. Season with salt to taste.

  8. Garnish with fresh cilantro and serve with fragrant rice and chapatti.
