This Butter Chicken recipe is a classic and beloved Indian dish showcasing tender chicken marinated in yogurt, garlic, ginger, and spices, then simmered in a luscious tomato-based sauce. The dish gets its name from the creamy, buttery sauce that the chicken is cooked in. The sauce is made with butter, cream, tomato puree, and a blend of aromatic spices. It is rich and flavourful, with a slightly tangy and spicy taste.

Butter Chicken (Murg Makhani) Recipe


Ingredients:

 Ingredients for the marinade

  •  2 - 4 chicken breasts depending on how many people you are cooking for

  • 1 inch piece of ginger finely grated

  • 3 cloves of garlic crushed

  • 3 tablespoons of  Greek natural yoghurt

 Main ingredients

  • 2 tablespoons of ghee or coconut oil

  • 2 teaspoons of ground coriander

  • 1 teaspoon of ground cumin

  • ½ teaspoon of chilli powder

  • 1 teaspoon of ground turmeric

  • 6 cardamom pods split open

  • 2 cinnamon sticks

  • 4 whole cloves

  • 2 whole chillies

  • ½ a block of good quality butter

  • 1 tablespoon of tomato puree

  • 1 tin of chopped tomatoes

  •  ½ a glass of double cream

  • 1 teaspoon of Celtic or Himalayan salt

 To finish

  • Coriander leaves

  • Juice of half a fresh lemon



How to make Butter Chicken (Murg Makhani)

Prep all your ingredients,


  1. Wash and dry the chicken breast, then cut into bite size pieces. Grate the ginger, crush the garlic and mix with the yoghurt, add this to the chicken and marinate for at least half an hour, longer if possible in the fridge.

  2. Mix the  ground coriander, cumin, turmeric and chili powder together.

  3. Heat the ghee over a low heat and add the ground spices fry gently for 30 seconds to release the flavours from the spices into the ghee.

  4. Raise the heat to high and add the chicken along with all of the marinade and cook for 5 minutes stirring frequently. The chicken will change colour as it seals. ( add a drop of water if it dries out)

  5. Lower the heat back to medium and add the whole spices, tomato puree and the butter, cook for a further 5 minutes.

  6. Now add the chopped tinned tomatoes and cook for another 20 minutes stirring occasionally.

  7. Add the double cream and chopped coriander leaves stir and cook for 2 minutes.  

  8. Stir in the lemon juice and serve.
