This Aubergine curry recipe is very popular with vegetarians, made with eggplants cooked in a rich and flavourful curry sauce. Ingredients:

  • 2 medium aubergines

  • 1 small onion, finely chopped

  • 1 green chilli, finely chopped

  • 2 chopped tomatoes

  • 1 tsp ginger-garlic paste

  • 1 tsp garam masala

  • 1 tsp cumin powder

  • 1 tsp coriander powder

  • 1/2 tsp turmeric powder

  • 1/2 tsp red chili powder

  • ½ cup of water

  • 2 tablespoons tomato puree

  • 2 tablespoons of coconut oil for frying the aubergine

  • 2 tablespoons of coconut oil for sauteing the onions

  • Salt to taste

  • Fresh coriander leaves, chopped

How to make Aubergine Curry

  Prep all your ingredients first


  1. To make a delicious aubergine curry, start by chopping up aubergines into bite-sized pieces and lightly salt them and set to one side for 30 minutes minimum, rinse the off with cold water and pat them dry with a tea towel.

  2. Now gently fry the aubergine in 2 tablespoons of the coconut oil until soft.

  3. In a separate pan use the other 2 tablespoons of coconut oil and sauté the onions, chillies, garlic, and ginger until fragrant, then add in diced tomatoes, tomato paste, and cook for a few minutes.

  4. Then add the ground cumin, coriander, chilli powder, turmeric, along with the garam masala and fry, you will see the oil starting to separate at this point add the cooked aubergine and simmer until everything is heated through. ( you may need to add some water if the curry looks too dry)

  5. Garnish with fresh coriander and serve with rice or naan for a tasty and satisfying meal. Enjoy!
