Hi There!

My Curry journey started back in the eighties at school in England, I remember the smell every Thursday and I remember balking at the smell and just looking at the stuff was awful. 

 

Well, I guess the tables have well and truly turned...

I suppose I got my 'hot buds' during my college days when Donner kebabs had hit Britain’s streets, my mate Wilf used to pour hot chilli sauce all over his, and I would wonder how he did that without being sick.  I tried some and didn’t  actually mind it, I guess it couldn’t have been too hot, so I tucked in and finished, thereafter I put chilli sauce on mine every time and along with the pickled green chillies developing a taste for the fiery stuff.

A few years later I worked with a guy named Paul fixing signs to job centres all around the country I ‘was’ the chief electrician. One evening in a little town called ‘Street’ in Somerset Paul suggested we ate Indian that night, well I wasn’t too sure about that, but he offered to order me something English and pay for it all if it wasn’t to my liking. I was over a barrel so I said yes OK I’d try it.

We sat at a table I remember the smells in there, it was basmati rice and spicy foods that I couldn’t name. I looked at the menu and didn’t have a clue what was what! the waiter brought over our drinks and complimentary papadoms and pickles. I will never forget the flavour of the mango chutney and minted yoghurt along with the onion and tomato raita. Paul then ordered chicken tikka and  chicken madras for our main course.

 

Well, when the waiter brought out two sizzling dishes, and I caught a whiff, my mouth watered. They advised me to squeeze the lemon wedge over the chicken pieces, then dip it into the  minted yoghurt . I’m not sure how to write the experience that followed, but the chicken just melted in my mouth and there was a massive explosion of flavour. It was something that I would never forget. The main course came out, I tried the chicken in its deep red sauce wow again there was a different explosive flavour, hotter but I didn’t mind that, it was the slow release of milder tastes they intrigued me.  It was like a build up and then, a new flavour would appear, it was fantastic certainly not the school slop that we had as kids. Even afterwards there was an afterglow of flavour even after two beers. I paid my way with the meal as I would have done anyway, but I believe it relieved Paul from financial distress. From that moment, on, working all over Britain, we visited many Indian Restaurants.

I always like to cook but had never tried to cook a curry, I had cooked some decent chilli con Carne's in my short cooking career but any attempt at a curry ended as slop. So I got my fix from takeaways and eating out. until a girlfriend bought me some spices and a cookbook, find out more about my first  successful curry  in this blog post.
